What I Ate Wednesday

One of my favorite posts to read on other blogs are What I Ate Wednesdays. For some reason I just enjoy seeing what other people eat in a day? I would ask “is that just me?” but other people post them so I assume some people are interested in what other people eat.

So here is my What I Ate Wednesday on non-school day:

On non-school weekdays (Tuesday and Thursday) I get to sleep in a little and I then usually spend them studying,  and getting stuff done.

It has been SO NICE out this week. Like in the 70s, with low humidity. So I couldn’t not sit outside and read this morning. Sipped my coffee + water and enjoyed a chapter in one of the book i’m currently reading.

After sitting outside for a bit I decided to try  a new combo for breakfast. A tortilla with a bunch of spring mix, a runny-ish egg, a slice of turkey bacon, half a small avocado and topped with pico. SO GOOD. Will definitely be making again. I mean look at all those beautiful colors 🙂

Then after doing some laundry, going on a run and doing some yoga I came home to enjoy this yummy and easy lunch. I have a bowl of cabbage/lettuce mix, topped with quinoa, roasted edamame and wonton strips with an asian dressing. I’ve been buying these bagged salad kits that come with the cabbage/lettuce mix, wonton strips/almonds, and the dressing and I love them. They’ve been so handy for quick lunches. All I had to do was make the quinoa and edamame.

After lunch I enjoyed one of these Emmy’s dark cacao coconut cookies. Love these! They’re perfect for when I have a sweet tooth after a meal (which let’s be honest, for me is almost always).

After lunch I headed to a coffee shop to get some studying and work done. I got a cafe au lait and ate this clif bar as a snack. I’m not normally a fan of clif bars, but I tried these after seeing an RD talk about them and this one is so good. I’m going to try to make my own version soon.

After being at the coffee shop for a few hours, I came home and relaxed for a bit until going to a barre class. I ate a honey crisp apple and it was legit so delicious. I usually buy gala apples, but these looked good so I got them instead. Usually honey crisp apples are huge so I don’t buy them, but these were normal sized so perfect for me!

After my barre class I came home super hungry and cooked up this quick pasta for dinner. It’s Banza chickpea pasta, which is awesome because it has more protein than normal protein (which helps keep you full), mixed with some pasta sauce, sautéed broccoli with garlic, roasted red bell peppers, cheese, red pepper flakes, and parsley. It was also #NationalPastaDay so obviously the Italian (& pasta lover in me) had to celebrate.

After dinner I showered and studied for the rest of the night. I also ate some chocolate chip cookie dough Halo top ice cream (my fave flavor) but forgot to take a picture.

Hope everybody is having a great week! I don’t know about you but i’m definitely ready for the weekend.
